Keto Chicken Soup

Fall is in the air and it is totally soup season. Back in the day that meant popping open a can.  My body just does not tolerate all those nasty chemicals and preservatives. It is weird that the cleaner I eat the less tolerant I am of unhealthy foods and ingredients. On the plus side it definitely provides a lot of motivation to spend the extra few minutes to cook something I know is healing my body as opposed to eating something that will hurt it.  I am consistently asking myself the question, “how do I want to feel tomorrow?” Inevitably the answer to the question is “well, I don’t want to feel like crap.” This is all the motivation I need. This is how I came up with this chicken soup recipe and “oh, yum.”

Creamy Keto Chicken Soup

4-5 tbsp Kerrygold butter
1 organic yellow onion finely chopped
4-5 cloves of organic garlic finely chopped
1 organic orange bellpepper (omit if you cannot tolerate night shades) finely chopped
2 packages organic chicken tenders cut into bite size pieces
2 tbsp salt
1 pint organic heavy whipping cream (you can use cocnut cream if paleo)
1 tbsp turmeric
1 tsp cayenne pepper
1 tsp paprika
1 tsp ground cumin
8 cups of organic beef bone broth
2 heads organic cauliflower chopped into bite size pieces

In a large pot saute onion, garlic, bellpepper, and chicken. Sprinkle in half the salt while sauteeing. Once the chicken is mostly cooked add the cream and all the spices and cook for a few minutes on medium. Next add the bone broth and cauliflower. Bring to a boil and the let cook on low for about 45 minutes. This is definitely not a busy weekday night recipe, but is great to cook up Sunday night as there will be leftovers for lunch the next couple of days. Top with a little crumbled organic sugar-free, preservative-free bacon.
